Bring up the song overlay. Tap the fourth symbol from the left at the bottom. Uncheck use default mode for Song. Choose your settings.
These settings are saved for this song.

Yes I get that, but the problem is that "Use half-page turns" is only available as a global setting. There is no ability to set "use half-page turns" for only this piece. 

The only setting that I see as being available for pieces specifically is "Display Mode".
